Freeze-dried coffee slices retain the original flavor of coffee better, because of the loose and porous internal structure, the dissolution speed is fast, it is convenient to measure the "instant coffee", can easily control the concentration of the beverage. The optimized preparation conditions were as follows: extraction temperature 90℃, extraction time 12min, solid-liquid ratio 1∶15, concentration to 65%, and vacuum drying at -36℃ for more than 20h after loading. The lyophilized slices have smooth surface, complete shape and pure flavor.
